TAHIN
A travel history in the Middle East, a passion for delicious, vegetarian food and a publisher that asks me to share my recipes — these are the ingredients for my second cookbook: TAHIN. TAHIN is an ode to the basic ingredient of Middle Eastern cuisine. And according to Vanja van der Leeden, culinary writer with a background as a professional chef, “one big party”.
I was first introduced to tahini at a market in the middle of the old city of Jerusalem. A slightly nutty, slightly bitter, silky sesame paste. And that tasted like more — it became one of the most important ingredients in my vegetarian, sustainable cooking studio. In addition, it is now the main subject of TAHIN: a cookbook in which you discover the endless possibilities of tahini. No fewer than 101 modern, light dishes packed with flavour!
My belief is that anyone can cook, as long as you know how and with which ingredients. This is proven by the 250 guests who attend cooking workshops at Esther’s Cookery every month. In the story of Ali Baba and the Forty Thieves, robbers open their treasury with the spell ‘Sesame, open thee’. In TAHIN you discover that sesame (paste) itself is a treasure in itself. About Esther Erwteman and the cooking studio
It is no coincidence that I wrote two vegetarian cookbooks. Since 2020 I run the (only!) vegetarian cooking studio in Amsterdam: Esther’s Cookery. There you follow cooking workshops according to the principles that I believe in: with what is available in season, only vegetables and above all very tasty. That is precisely the distinguishing factor: delicious food that (not so) happens to be meatless. With my knowledge of vegetable cuisine and my passion for good food, I show and taste to everyone that meat is not necessary for a delicious meal. You don’t have to replace it — with the right guidance and the best ingredients, you’ll enjoy cooking and eating.
Meanwhile, 250 guests per month follow a cooking workshop. Without them and without my husband and partner Jaier Weissman, there would be no Esther’s Cookery. Where I reveal my cooking secrets to the guests, Jaier is the vegetable garden chef (so that we cook with the best, most sustainable ingredients) and he ensures that the cooking studio looks beautiful and atmospheric. And our daughter Sara, who tastes the new recipes with just as much love as her parents.
