For years I traveled all over the world for my work. In the most beautiful places I came across the tastiest recipes, with the most delicious stories. In Ghana, Israel, Indonesia, India and Iraq I got to know so many delicious things that I couldn’t help but combine these foreign flavors with the Dutch-Jewish recipes and eating traditions that my mother taught me.

My belief is that anyone can cook, as long as you know how and with which ingredients. You will discover exactly that in my cookbooks. There are now two cookbooks in stores: NOSH and TAHIN. Both cookbooks are vegetarian and titillating.

Why TAHIN?

The second member of the Esther’s Cookery family of books! TAHIN is an ode to the eponymous basic ingredient of Middle Eastern cuisine. Since my first encounter with tahini, in the middle of the old city of Jerusalem, I was hooked. The slightly nutty, slightly bitter, silky sesame paste already enriches many portions of falafel and hummus, but there is so much more possible.

In TAHIN you will discover more than 101 impressive, modern, light dishes full of flavour. Something for everyone, because TAHIN goes from a pile of fresh pita bread with tahini spread to a creamy chocolate tahini cake for coffee and from a spicy lentil salad full of flavor and vegetables to chickpea sesame tagine with rose harissa.

Why NOSH?

One fine day, publisher Nieuw Amsterdam asked me to write a cookbook. I didn’t have to think long about that: there is so much beauty and deliciousness to share. The result, NOSH, has been in all bookstores and in a lot of Dutch kitchens since April 2020. The second edition is now a fact and thousands of people enjoy silky smooth choemus, crispy, spicy cauliflower bites and the stories from my sustainable, Jewish and vegetarian kitchen.

With NOSH, just like during the cooking workshops, we celebrate the diversity of my Jewish kitchen with the best recipes and stories.

As written: everyone can cook. You just need to know how (with my cookbooks) and you need the best ingredients. Would you rather have a look in our cook shop? You are very welcome both online and in our studio. For the best tahini, great date molasses, za’atar and of course my famous baba ganoush grill plates, the doors of Esther’s Cookery are wide open for you! We are open Monday to Wednesday from 13:00 – 17:00 and Thursday to Saturday from 11:00 – 17:00.

About Esther Erwteman and the cooking studio

It is no coincidence that I wrote two vegetarian cookbooks. Since 2020 I run the (only!) vegetarian cooking studio in Amsterdam: Esther’s Cookery. There you follow cooking workshops according to the principles that I believe in: with what is available in season, only vegetables and above all very tasty. That is precisely the distinguishing factor: delicious food that (not so) happens to be meatless. With my knowledge of vegetable cuisine and my passion for good food, I show and taste to everyone that meat is not necessary for a delicious meal. You don’t have to replace it — with the right guidance and the best ingredients, you’ll enjoy cooking and eating.

Meanwhile, 250 guests per month follow a cooking workshop. Without them and without my husband and partner Jaier Weissman, there would be no Esther’s Cookery. Where I reveal my cooking secrets to the guests, Jaier is the vegetable garden chef (so that we cook with the best, most sustainable ingredients) and he ensures that the cooking studio looks beautiful and atmospheric. And our daughter Sara, who tastes the new recipes with just as much love as her parents.
