Hummus/Choemoes
Chumus/hummus, all the same and for many a reason to go to war over where it comes from or who makes it best. In my kitchen mainly a dish that I make almost daily and every time better, tastier and more refined than the last time.
Indispensable when making choemoesTechina /Tahini! use the best techina for best results. Both Al Arz and Har Bracha are great techina and will define the flavor of your chumus.

- Chickpeas
250 g dried chickpeas
30 grams of baking powder - Chumus
250 grams of tahini
2 tsp salt
Juice of ½ – 1 lemon
Boiling water of the chickpeas - Garnish (basic)
1 tbsp za’atar
1 tbsp paprika powder
Olive oil
- More than 24 hours from soaking to eating, but less than 15 minutes from boiled chickpeas to a plate!

Choose all your ingredients on the right, you need either the Al Arz or Har Bracha tahini. I use Har Bracha but tastes differ!
