Mung beans with cherry tomato, crispy onion & garlic
You need this
• 250 grams of mung beans
• 1 tablespoon of table salt
• 1 yellow onion, in very thin rings — preferably using a mandoline
• 2 garlic cloves, very thinly sliced — preferably using a mandoline
• 300 grams cherry tomato
• 2 teaspoons of smoked maldon salt
• 2 tablespoons of tahini
• 2 tablespoons of water
• juice of half a lemon
• 20 grams of mint
• optional: rose harissa

To work
Rinse the mung beans and soak them in plenty of water for at least 4 hours or overnight
Bring a medium saucepan of cold water to a boil. Add the salt and then the beans, bring to a boil and then turn the heat up to medium. Simmer the beans for about 15 to 20 minutes or until just tender.
They're ready when the beans are fully cooked, but not mushy. Drain and rinse under cold water to stop the cooking process.
Meanwhile: fry the onion in plenty of oil until crispy. Remove the onions from the pan and drain. Now fry the garlic and when they are almost done add the cherry tomatoes and the salt.
Make the tahini by mixing the ingredients with a fork.
Pick the mint leaves and cut them into thin strips.
Now make the salad by mixing the mung beans with most of the onions, all the garlic and tomato.
Then add the mint and the tahini dressing.
Mix and taste. Would you like to add extra salt or optionally 1-2 teaspoons of rose harissa?
Transfer the salad to the serving platter and add the rest of the onions.
